Catfish Fillets Creole

Ingredients

1 lb.skinned catfish fillets
½ cupchopped green pepper
1 tablespoonoil
2 medium-sized tomatoes, chopped
1 tablespoonminced onion
1 tablespoonlemon juice
½ teaspoonbasil leaves
0.125 teaspoonpepper
Dash cayenne pepper

How to Prepare

Preheat oven to 450 degrees. Arrange fish fillets in a greased 13 x 9-inch pan. Cook green pepper in oil in a saucepan until tender. Add tomatoes, onion, lemon juice, basil, pepper and cayenne pepper. Cook and stir until slightly thickened, 5 to 10 minutes. Spoon over fish and bake at 450 degrees for 15 to 20 minutes or until fish flakes easily when tested with a fork.
