Fluffy Corn Muffins

Cornbread is always a family staple and when added in to a soup or delicious sauce, it’s even better! Sure, you can buy a box mix but why not create your own recipe! This one is super simple and delicious. The fluffy style biscuits make every meal a true experience!

Serves: 6


1-½ cupflour
2.3 cupfinely ground cornmeal
1-½ cupsugar
1-½ teaspoonbaking powder
½ teaspoonsalt
1 cupmilk (any milk works)
2 tablespoonoil
2 large eggs
1.4 cupbutter, softened

How to Prepare

Preheat oven to 350° F. Grease 12 muffin cups. In medium bowl, combine flour, cornmeal, baking powder and salt; mix well. In another large bowl, cream together the butter and sugar. Add in milk and oil and mix on low. Add the two beaten eggs and whisk lightly.  Stir in remaining ingredients just until smooth. Spoon batter in to greased muffin cups and bake 18 to 20 minutes. Immediately remove from muffin cups.

Don’t forget the extra butter!
