Who would’ve thought deer sausage could be eaten for breakfast? (I’m sure lots of people). But, this was a pleasant surprise for me. Whether you have pre-seasoned deer breakfast sausage, or regular deer burger, this is a great way to use that meat for a quick breakfast. Slowly incorporating the flour and milk is essential for the right consistency for this recipe. Make the gravy however spicy or sweet as you desire by adding red pepper flakes and pepper. I enjoy my breakfast sausage a bit on the spicy side. The perfect time to make this is after a successful hunt at daybreak on a cold, winter morning.

*If seasoning ground deer to make breakfast sausage: marjoram, sage, thyme, nutmeg, red pepper flakes, and garlic powder |
How to Prepare
- Cook sausage in skillet over medium heat until browned. If using regular burger, season the meat while it’s cooking.
- Lower the heat to medium-low and add flour and mix until thickening.
- Add milk and continue stirring.
- Continue to add milk and flour to get the consistency you desire for the gravy. Constantly stir the mixture. It shouldn’t be thin, but should have enough gravy to cover the meat and pours over biscuits easily.
- Serve warm over fresh biscuits!
