Ground Deer Breakfast Casserole

I could eat breakfast any time of day; it is by far my favorite meal. This casserole is perfect to prepare for the week or for weekend guests. It is delicious and simple to prepare, just throw it back in the oven on 350 degrees to reheat. No worries if you don’t have deer breakfast sausage. Just follow the directions and season regular ground deer to taste like breakfast sausage! Who else likes the sound of deer for breakfast?

Ingredients

1 lb.Deer breakfast sausage or ground deer
4 Eggs
1 White onion, chopped
1 Green pepper, chopped
1 cupShredded cheddar cheese
1 cupShredded Mozzarella cheese
1 cupMilk
1 packageFrozen hash browns OR Shredded red potatoes
*If seasoning the ground deer, you'll need sage, marjoram, thyme, nutmeg, garlic powder, brown sugar, and red pepper flakes

How to Prepare

  1. Heat oven to 350 degrees.
  2. First, we want to season the meat if you only have plain ground deer. Add the meat to the skillet over medium-low heat with butter. Chop and cook and add the onion, sage, thyme, garlic, cloves, marjoram, brown sugar, red pepper flakes, and Cheyanne pepper. Cook until meat is brown. Set aside in large bowl.
  3. Add the hash browns to skillet with oil or butter and cook until browned.
  4. While hash browns are cooking, break eggs and scramble in a small bowl. Add the milk, salt and pepper. Set aside.
  5. Add bell peppers to deer meat and combine.
  6. Grease a casserole dish, and add the hash browns to the bottom. Layer with one cup of either cheese, then layer with the meat, then pour the egg mixture over casserole. Add remaining cup of cheese.
  7. Place in oven and cook for 45 minutes. Serve warm to wrap in foil and place in fridge, and place in oven the next morning to warm and serve for breakfast.
