Smoked Fish Rarebit

Serves: 6


2 cupboned, flaked, smoked fish
2 tablespoonbutter or margarine
2 tablespoonflour
½ teaspoonsalt
¼ teaspoondry mustard
dash cayenne pepper
1-½ cupmilk
2 cupshredded sharp-process American cheese
1 package(10 ounces) frozen peas, cooked and drained
3 tablespoonsliced green onion
2 tablespoonchopped pimiento (optional)
6 patty shells, buttered toast points or English muffins

How to Prepare

In a 2-quart sauce pan, melt butter; stir in flour, salt, dry mustard and cayenne pepper. Add milk; cook, stirring constantly until thick and smooth. Add cheese; stir until cheese is melted. Fold in smoked fish, peas, green onion and pimiento; heat. Serve in patty shells, or on toast points or English muffins.
